Yiouvarlakia - Greek Meatball soup with Lemon
Yiouvarlakia - Greek Meatball soup with Lemon
Ingredients:
1 cup of Rise
2 cups of water
1 package of groun beef
3 tablespoons of oilve oil
1 Onion
1 garlic clove
2 and half tablespoons of dill
1 tablespoon of parsley
1 tablespoon of salt
1/4 tablespoon of pepper
2 eggs
1 lemon


Directions:

First chop onions and garlic in very small pieces. Cut the dill and the parsley. In a bowl add the meat, the salt, the pepper, the dill, the parsley, half cup of rise the 2 tablespoons olive of oil, half chopped onion and the eggs. Mix with your hands for about 2 minutes.
When this done put the bowl in the fridge for 10 minutes.
In a pot add 2 cups of water and adjust heat on high. Add one tablespoon of oil, half garlic. When water is really hot lower heat on number 6. Now form the ground beef to any shape you like and put them in the pot. Cook for about 1 hour. Squeeze the lemon and put it in the pot. When this is done taste it as it might need more salt or pepper is up to you.

Spetsofai - Homemade Sausages with Peppers
Ingredients:

1 sausage
1 Onion
2 garlic cloves
5 tablespoons of olive oil
4 peppers (Green, Red, Yellow, Orange)
1 tablespoon of salt
1/2 tablespoon of pepper
Sprinkle of Crushed Chilli Peppers
1 tablespoon of Brown Sugar or optional (honey)
3 tablespoons of wine (Red or White)
1 cube of chicken knorr
1/2 cup of rise
2 cups of water



Directions:

First chop onions and garlic in very small pieces. Cut the sausage in 5 or 6 pieces. Use a pot, add the oil and the heat on number 7. Place inside the onions, the garlic and the sausages. Brown them for 5 minutes and then add the water. Cut the peppers and put them in the pot. Also, add the salt, the pepper, the chilli peppers, the cube of chicken knorr, the sugar and the wine. Cook for another 40 minutes. After 45 minutes add the rise. Cooking time it should be about an hour. When you add rise check if it needs more water and make sure it won't stick on the pot.

Stifado - Beef with small onions
Ingredients:

A package of beef in pieces
12 small onions
3 tablespoons of olive oil
1/2 cup of vinegar
1 tablespoon of salt
1 tablespoon of pepper
3 bay leaves
4 cloves of garlic
1 big onion
2 tablespoons of tomato paste
2 tablespoons of crushed tomatoes
1 tablespoon of brown sugar
3 pieces of carnation
2 cups of water





Directions:

In this recipe you can add more spices but I used what I had available. Remove skin from small onions and put them away. Now chop onion and garlics in very small pieces. Use a pot, add the oil and adjust heat on number 7. Place inside the onion, the garlics and cook for 5 minutes. Add beef, brown them for 10 minutes and then add the water. Continue adding the salt, the pepper, the bay leaves, the tomato paste and crushed tomatoes, the vinegar , the sugar and the carnation. Now cook for another 1 hour and 45 minutes. Always check water if it needs more.

Gabbage with Ground Beef
Gabbage with Ground Beef
Ingredients:

A package of ground beef
3 tablespoons of olive oil
1 tablespoon of salt
1 tablespoon of pepper
1 small gabbage
1 onion
3 cloves of garlic
2 tablespoons of dill
1 lemon
5 cups of water
3/4 cup of  basmati rise





Directions:

Instead of doing gabbage rolls which takes time I decided to make them this way since I like them alot. Another time will make them with tomato paste.

First cut the gabbage in small pieces not really small. Cut the onions, the garlic and the dill. Heat on 7 and use a big pot. Add the olive the onions, the garlic and the ground beef. Break the meat with a wooden spatula. It might take up to 10 minutes but make sure all crumbles are brown no pink. When this is done add the water, the salt, the pepper, the dill and cook for 50 minutes. When this is done add the rise and cook for another 15 minutes. I think I used one more cup of water but because we use rise it should take care the water. When is done taste it. I had to sprinkle more salt and pepper, bassically this is pretty much 3 servings.
